Wow, those bananas look healthy.
Peanut Butter Boy put out a challenge for peanut-butter breakfast recipes. Challenges always sound terrific until the night before, at which time I’m frantically trying to pull something out of my … pantry.
Here’s my thought process: What do I like for breakfast? Pancakes!
What else do I like? Cream cheese! Layers! Sticky goo!

Leaning Tower of Double-Stuffed Peanut-Butter Overly-Hyphenated Flapjacks
In a mixer, whip 1/4 cup of softened cream cheese, 1/4 cup of peanut butter, 1/4 cup of powdered sugar and 1 tbsp of milk. When it’s glossy it’s done. Set this aside for later.
Make some pancakes. I don’t care if you use a mix. From scratch is always nice.
I dropped a teaspoon of peanut butter into the cooking pancake and swirled it around. If you use white flour in the pancakes you’ll be able to see a nice pattern when the pancake is cooked.
I used wheat flour so the design is a lovely brown on brown. If you are artistic you can make hearts and write love notes using the peanut butter/ pancake medium. I’m not that artistic or patient.
Spread 1 tablespoon of the peanut-butter mixture on top of a pancake, top with second pancake and repeat. I considered topping this with marshmallows, but that would be over the top.
I think I had four layers. I needed a big glass of milk …. and an exercise plan.

The last time we had my son’s friends spend the night, I found out that pancakes smeared with peanut butter and then topped with syrup were de rigueur with the second grade set.
I’m totally using this recipe for our next slumber party and I’ll be voted the bestest mom ever! Thanks!!
